The Best Cheese I Have Ever Eaten- Australian

Just purchased for the first time, and definitely not the last, Old Croc Extra Sharp Cheddar, from a local market (hate walmart). Unbelievable. This is the best cheese I ever had and that is saying quite a bit as I am a cheese connoisseur.

Anyone else ever have this treat?

Haven't seen that one but I LOVE a sharp cheddar. Maybe it's at Trader Joes ?

I always use a strong Canadian Cheddar for my Macaroni Cheese [:)] but I will have to give this a try.

It's a cheese-a-thon here in Tasmania. We've always had good dairy products but in the last few decades many people with traditional skills from all over the world have moved here and are producing some excellent cheeses. The industry seems to be a significant proportion of the economy now.

Not sure if it's at Trader Joes. As a matter of fact I'm having a hard time pinning down who has it.

Speaking of Mac -n- cheese, my wifes grandmother used to make some awesome mac using a long hollow noodle and baked it. My wife, who is a good cook in her own rite, has tried several times to duplicate it and could never get it quite right. Not sure what the old woman did, but it was fabulous.

And Neilster. That is beautiful. I've often thought about moving to Oz and opening up a Southern (U.S) Smoked BBQ restaurant and introduce it to the locals. Smoked hog, beef, poultry, gumbos, etouffee, frog legs, catfish, slaw, greens, beans, hush puppies etc. Comfort food. Heck, there might even be people doing it there now.

I have to say that the Old Crock Extra Sharp is just a touch on the salty side. But I hardly use salt anyways, so a little here and there shouldn't hurt.
