I'm looking for some suggestions for scenarios or even some advice on mission generation settings that are suited for beginners who have a grasp on the basics.

The first few scenarios are arranged in a way that allows you to familiarize yourself with more specific features if you play them in sequence. Generally, the best approach is to generate a small battle where you have a sufficient advantage over the AI — in terms of equipment, points, and/or morale/training. This way, you'll quickly grasp the basic concepts, and then you can gradually increase the challenge.
