During planet creation in the stage immediately prior to the dissolution war there is a page that splits up the planet's industry into Farming, Mining, and services. How exactly do all of these affect the final map?

Sufficient farming activity pre-dissolution war will usually translate into significant farming activity post-dissolution war, which in turn translates into more somewhat more peaceful games (more farmer minors and republican majors). I'm not sure if there's any difference between mining and services though.

Heavy mining activities in colonisation phase can lead to poor metal/rare metal deposits, you better beeline for metal soil filtration.

"Farming" is primarily a mater of survival. While you can live off imported food, local production is always easier. Few things can show the progress of human industrialisation and progress as much as the percentage of the workforce in Agriculture.
It used to be that 90% of the population needed to work in Agriculture.
In a modern first world country, you will not reach 5%.
So a high percentage indicates a low development civilisation/colony.

As Marchen said, heavy Mining could indicate that a lot of easy deposits are depleted. However low deposits say that clearer - there is literally nothing left to mine.
There are actually a few maps, where resource deposits are on ruins, even with planet that have few ruins - presumably those were mining towns that collapsed before the deposit was mined out.

"Services" seems to mean a lot of ruins. Services are the ultimative indicator of urbansiaiton.
