How can you defend against port supply interdiction? I have tried putting anti aircraft guns into the port interceptors within 3 hexes and on full support but nothing appears to work. Am I missing something? Also you don’t seem to be able to stop supply from going to a port which would also help with interdiction

Several answers:
1. I do not think AAA will help you except Alvaro says the contrary or do something in the next beta patch. Could be an idea?

2. Putting air superiority groups do not have an impact from my point of view. It seems you have the same behavior. See this thread:

Next version will have surface ships escorting a convoy automatically damaging subs based on their ASW just like air units intercepting other air units automatically.

For an example supply goes to Tobruk from Italy every turn is there anyway you can turn off the supply so that it stops going from Italy to Tobruk
