Is the AI attacks the same way on the Allied or German side ?
Ex. : does it follow the same way of organizing the units before attacking ?

There was the start of a discussion on doctrine here.... didn't get to whether Allied and Axis AI responded the same. Good question though - is there a need to think differently dependant on which side you are playing. Or are any differences so subtle it would not affect the way you give orders.
