select a bomber of the type you are using - say the Lancaster III. on the lower rhs of the unit image you will see the current load out and the options - these tend to trade range (extra fuel) for bomb load and for strat bombers a bomb load that will key people (incendiaries etc) for one to destroy hard targets (few larger bombs).

Pick the load you want, you'll then see an option to apply that just to that squadron, all from that base, all in that air mission, all in that air command or all of that type.

You'll need to do each plane type separately but mostly the auto assign is a good fit to the mission so its most important when you are trading range for bomb load

Important thing to note, that selected load is indeed usually for the max range purposes (unless you have low fuel) just to show how far your groups can go. Actual auto selection depends on mission type and range and is shown on the battle detail window.
