Hello,
I know one can add more Weapon sounds to the end of the current.wav files inside the Sound.sfx file.
I.E.
The current amount of .wav's inside WaR is 107,I added .wav 108 and assigned that to the Wurfgerat 40.
Thus enabling it to have it's own distinct sound rather than share a sound with another weapon.

But how many times can this be done?

And is it possible to add more Ambient sounds in a similar manner?

In practical terms, you can add as many weapon sounds as you like. There's no way to tell the game to play other types of sounds (ambient, voice cue, music, etc) even if you add them to the sound files, however. Those are all based on coded indexes.
