I'm still in the tutorials but I havn't see a unit retreat or rout as a result of combat results. I don't remember seeing either of these in the AARs that are currently available. Is retreat or rout a possible combat result?

A rout result is probably similar to the panicked damage condition. There isn't a result that automatically drives a unit out of a hex, however; players have to choose to do that.

Will the AI retreat units if they are panicked etc. to try and take them out of line of fire or will they just stay in place and attempt to rally?

It depends on the AI scenario parameters for the unit. Some units will have AI "orders" never to fall back, for instance.
