Personally, I prefer a core of Grenadiers as my main Infantry force (I usually upgrade all my Wehrmacht Infantry to Grenadiers for 40 prestige ASAP) with some Fallschirmjägers and Gebirgsjägers as specialty support. They lack somewhat against Hard targets but I try to play the Campaign and Scenarios as historical as I can. Fallschirmjägers do get the "fortkiller" trait so they can somewhat sub for Pionieres (although I use them too, just not en masse like others). It's just historically, they were elite troops of the Wehrmacht. That is a very intriguing concept. Your well written response has convinced me to try things your way.
