Played StarShatter, Battlecruiser, etc but I'm looking for a good, immersive, space combat sim that I can interface with the hardware in my home-built cockpit. The ideal would include multimonitor support and input/output interface kinda like MS Flight Simulator has as well as realistic and CHALLENGING Enemy AI. Is there ANYTHING out there????

I'm not even sure is there game which fills all your criteria. You can start from I've Found Her which is among most realistic space combat sims ever and likely fills most of your criteria (except maybe multimonitor support)

There is the X Series of games from Egosoft. X3 is availible via Steam or can be Store Bought, they have just released the patch that removes the Starforce protection an NOCD etc.

X games are great, but do not excel at combat. They are more empire building games, both economic and military.

Yeah once you can afford an armada in X series you don't even need to fight anymore. It is really a space economic strategy game. Quite challenging and fun in the beginning, but, easily becomes too easy later on when you have 100's of everything. lol Selling Space Fuel and Space Weed FTW. ;)
