The stack limit for defense is 100; for an attacker it is 100 for 2 sides of attack or less;
for 3 sides of attack, 150; for 4 sides 200; for 5 sides of attack, 500; and for 6 sides of
attack, 300.

Why does the stack limit go from 500 for 5 sides down to 300 for 6 sides?

It's a misprint. There are a few errors in the manual.

So, I assume the progression goes:

1 or 2 hexsides -> 100
3 hexsides -> 150
4 hexsides -> 200
5 hexsides -> 250
6 hexsides -> 300 ?

Yes, 250 for five hexsides. The manual does state this accurately at the top of page 65, in the middle of the example of combat.
