One more chilly not, not a heavy freeze like last night, and we will be back to the high 70s/ low 80s for daytime temps. Schanilec failed! [:D]

I suffer, we all suffer. It's not nice or wise to taunt the Evil North. Hmmm, something different for a change...I'm thinking locusts. I sure wish I had a summit to reside upon so that I can think this all the way through. Plague? no, no. Ran out of plague in December. I guess locusts for the time being. That or Jack Russell Terrier's.[:'(]

I have Springer Spaniels. Two houses down is "Rudy", a Jack Russell that's Beaudy's best friend in the whole world. Where one is found, so is the other. I really like Jack Russells and Beaudy the Wonder Dog agrees.

But then. Easter time is lamb time. But the only decent lamb available down here is a fresh leg and that’s maybe 7-8 lbs bone-in. But one can only have so much lamb roast, lamb kabobs, lamb stew, before they get bored. So what to do in the interim times between lamb left-overs?

How about Portuguese black beans? The lamb is usually in a yogurt/lemon juice base, but the beans are cooked with sweet onion, sweet peppers and cumin. An interresting juxtaposition of flavors. Traditionally, it’s cooked with linguisa and ham hocks, but you can dump the lamb bone in there and some ham and get pretty righteous. Gotta do it with Indian Basmati rice as a bed and with a garnish of greens sauteed in a balsamic vinaigrette. Woof !!

So then, lamb, lamb, beans, lamb, beans, lamb, beans, and then whatever’s left over before we hit the soft-shell crabs and another round of chicken teriyaki and veggie tempura.
