Crimson Skies had very little to do with simulation, but it could be fun to fly:

If you want something more serious, take a look at Combat Flight Simulator 2. There are a lot of user-made and after market, thirties-era aircraft for it, Curtiss Hawks, Boeing Pea-shooters, and the like.
