How to reduce fortresses?

Hi,

which air mission do I have to choose if I wanted to destroy fortresses' guns like in Hongkong or Singapore?

Ok, there is a difference between "fortifications" and "coastal defense" guns.
 
Fortifications can't be destroyed by bombardments or air attacks. Coastal defense guns however can be disabled/destroyed through either naval bombardment or port attacks.... In theory, ground attack could hit coastal defense guns, but the chances of actually hitting the correct unit is small.....

Fortress units (LCUs) are targetted by aircraft on port attack and by ships on 'Bombardment' missions.
If bombarding with ships remember that large fortress guns are battleship armament so only use BBs - CAs will have to close the range to fire and be susceptable to horrendous fire from the defending CD unit
